ROCKIN MOROCCAN STEW

This flavour packed vegetable stew is as healthy as it is tasty. It's the perfect meal for the cool fall & winter days ahead.

I've been making this stew from the Looneyspoons Collection for years. There are loads of fiberous veggies like chickpeas, sweet potatoes, and green peppers, so it's filling and yummy. Not to mention the comforting flavours of curry, cumin and chili.

Having recently transitioned to a mostly plant-based diet, I'm so glad I've kept this vegetable stew recipe around. It’s even a hit with the men in the house. (15 and 50) There is an abundance of flavours and nutritious fibber in each bite, allowing you to indulge in a satisfying meal without experiencing any sense of deprivation or guilt.

Even though there are a lot of ingredients, the steps are incredibly simple and the results are so worth it.

Prepare and measure everything first, then just throw it in. I add the left over stew to masson jars and put them in the fridge. Well sealed, you can keep it in the fridge for a week or so. I have frozen it before but it can get a bit mushy.
